Oven Roasted Bannas
By Chef Condra Easley, Patisserie Angelica, Santa Rosa, CA

Yield: 3 portions

Ingredients:
3 ripe Bananas
2 tbls. melted Unsalted Butter
1/4 to 1/3 cup Vanilla Sugar or Regular Sugar

Procedure:
Preheat oven to 350 ° F.

Slice bananas in and place cut side up on a non-stick baking surface or silicone baking mat. Brush each banana with melted butter and sprinkle generously with vanilla sugar. Roast in the oven until caramelized approximately 15-30 minutes. Bananas should maintain their shape but be cooked. Allow to cool.

**Other fruits that benefit from oven roasting are figs, peaches (not white as they are too sweet), plums, blackberries and strawberries.

Fruit is roasted at 350°F. Fruit is dried at, 225°F, takes longer and offers a crisper finish.
